SHAPING A GREEN FUTURE: SUSTAINABILITY INITIATIVES FROM SPEIDEL`S BRAUMANUFAKTUR

We, the Speidel family, have been running our family-owned house since 1763. We want to use our strength for many generations to come: preserving the tradition of warm hospitality, changing and growing with the demands of the times, here in this place, in the wonderful landscape of the Swabian Alb, which we love with all our hearts.

The natural changes of time have left their mark on our house: The brewery inn was fundamentally renovated in 1970 and expanded to include guest rooms, at that time with a swimming pool that was heated by brewing cooling water. In 1978 the brewery had to stop operations. The focus of our activities was then on the restaurant, which developed into a popular eatery.

When the renewal of the brewing tradition came up in 1990, it quickly became clear that the empty brewery buildings should be brought back to life. They shape the town of Ödenwaldstetten and give it a unique silhouette that can be seen from far away here on the Alb, which was and is very important to us to preserve, because for us the preservation of the visible structure is just as much a part of protecting our homeland as the preservation of the landscape .

The hotel extension was built in 2005. The design language of the building and the materials of the outer facade are taken from the basic elements of village, Swabian architecture and are reminiscent of the farms that once stood on this site. In 2008, new conference rooms were set up, again in the unused rooms, which have not lost their original brewing industry character despite the change in use.

Generation after generation, we enable our guests to feel comfortable, spend enjoyable days or hours in our house and learn to appreciate the beauty of the area. As “Taste the South of Baden-Württemberg” innkeepers, we have been using products from the region in our kitchen with great success for over 10 years. In addition to the short procurement routes, the benefit lies in the support of producers in the region. From the Alb for the Alb. Whether Hohensteiner cheese, Alb buffalo, Meidelstetter lentils or Ehestetter mushrooms, each of these products serves to preserve the region from which we benefit so much.

We know that our environment is our greatest potential. It is therefore our concern to further strengthen awareness of active environmental protection and careful, responsible use of resources when setting the course for future generations. By implementing GreenSign environmental management, we are pursuing a constant improvement in environmental protection measures and a consistent implementation of all goals and plans.

In our brewery we work strictly in accordance with the German Purity Law, which only allows us to use a few, selected and natural raw materials to produce the product “beer”. We want to symbolically transfer this purity law to all parts of our company and give it the following content:

We attach particular importance to the long-term saving of energy and water, as well as to reducing waste and emissions. We also avoid substances that are harmful to the environment, such as those found in many cleaning and detergent products. We also try to raise awareness among our guests and employees about environmental protection.
Commitment to nature conservation: As a biosphere area partner, we are committed to preserving the natural and cultural landscape worthy of protection in various ways:
Our food producers largely source their raw materials from the biosphere area and the districts involved in the biosphere area. The raw material suppliers must adhere to the special production criteria of the biosphere area. These include, for example, a fixed percentage of extensive areas or the avoidance of genetic engineering and grain stalk shorteners.
We restaurateurs primarily process these regionally produced products and thus promote sales of these products.
Information centers, educational partners and nature and landscape guides explain the connections between the management of cultural landscapes and ecology.
In addition, the biosphere area partners collect donations for nature conservation projects.
Our employees are the heart of the hotel and make it come alive. They welcome our guests and make them feel welcome. You fulfill your tasks with joy and are guided by high quality and service standards. The collaboration is characterized by respect and appreciation for each other. Responsibility for operational environmental protection lies with the management of the Gasthof Lamm GmbH brewery, in particular Ms. Tina Speidel.

We are committed to permanently monitoring and improving our environmental protection services in annual internal audits. If necessary, environmental policy is adapted to current circumstances. In addition, we are committed to complying with all relevant legislation, relevant environmental laws and relevant regulations.
